Bala Chai Praline Cookies

2 1/4 cups flour
1/2 cup vegan butter
1 tsp baking soda
1/2 tsp baking powder
2 tbsp Bala chai powder, steeped in 2 tbsp boiling water
1 cup dark brown sugar
1/2 cup maple syrup
2 TBSP applesauce
1/4 cup chopped pecans
1 cup full fat coconut milk
3/4 cup maple syrup
1 tbsp chai powder + 1 tbsp hot boiling water
1.) Steep 3 tbsp chai in boiling water. Strain after 4 minutes, set aside while you proceed with next steps.
2.) Preheat oven to 350 degrees. Line two baking sheets
with parchment paper.
3.) Using an electric mixer in medium speed, cream together the sugar, maple syrup, and butter until light. Add 2 tbsp of the chai and applesauce and mix until thoroughly combined on medium speed.
4.) Fold in the flour, baking soda, and baking powder into the wet ingredients until cookie dough comes together. Gently mix in the chopped pecans.
5.) Form cookie dough into 2 inch balls. 9 cookies per tray to space them out well.
6.) Bake cookies for 10 minutes, or until golden brown on the bottom of cookie. Flip cookie over if needed to check for doneness. Remove from oven, and allow to cool on baking sheets for 2 minutes, then transfer to cooling racks.
7.) While cookies are cooling, make the caramel. In a saucepot, heat the maple syrup, coconut milk, and chai on medium heat. Cook for 10-15 minutes, until it bubbles and reduces, and remove from heat. Avoid overcooking.
8.) Drizzle the cookies with caramel and serve!
